He explains the importance of quality, and the nature of each ingredient and technique as part of a logical, disciplined and easy-to-remember food hierarchy. You discover the centuries-old secrets of food as prepared in Italy, from mountains to seas.
- He’ll talk about the Onion Road™. This road heads inland, through the valleys and mountains. It’s sweet, meaty and earthy...like the woods in Autumn.
- Then he’ll explain the Garlic Road™. This road leads to the sea. It’s salty, hot and pungent...like the coast in Summer.
It’s time to cook! You build your teams and begin the multi-stage preparation of first-course Onion Road dishes, like Amatriciana, pasta e fagioli, or piselli e prosciutto. At the same time, you’ll be preparing Garlic Road classics like arrabbiata, pasta al tonno or seppie e piselli. Second-course choreography follows. Together you enjoy the banquet, at table, along with local wines and cheeses and specialty desserts. A passeggiata through the medieval town , local ruins, a formal garden or a visit to a vitner can follow. You arrive in Rome in time for dinner, if you think you can ever eat again!

The 7-Hour Day Includes:
